Soft wheat has a lower protein and gluten content than hard wheat, so it is not a bread flour. Rather, its lighter texture and milder flavor make it perfect to use in cakes, pastries, pastas, muffins, cookies and other treats. If you are making a change to baking with this wholegrain goodness, you can feel confident using the same amount of the soft white flour as the all-purpose flour it calls for in whichever recipe you are using.
