This staple is one of our all-time favorites, perfect for quick breads, muffins, cakes and cookies and stands up well in yeast doughs and sourdoughs. It has an earthy, wholegrain flavor that will make you choose it again and again. We recommend this universal flour to those who struggle with gluten sensitivities as it is easier to digest due to its water-soluble properties. Truly a must in any baker’s pantry. * A note to the bread baker: It is best not to overwork spelt when making yeast or sourdoughs as the gluten strands are fragile and too much kneading will break it down.
