Khorasan wheat is an ancient grain, most likely originating in Mesopotamia. Legends exist of this grain being found in Egyptian tombs. It is prized for its nutrition, ease of digestibility, sweet nutty-buttery taste and firm texture. Many people with sensitivities to modern wheat report being able to eat Khorasan wheat with no difficulty and that it is an excellent alternative to modern wheat. Khorasan wheat is an excellent source of protein, fibre, zinc, phosphorus, magnesium, vitamin B1, and vitamin B3. It is also high in many minerals such as selenium, copper and manganese. (Manganese benefits the body by supporting metabolism, bone health, and antioxidant defense, while also being essential for wound healing, brain function and reproduction.) This amazing grain can be freshly milled and used in a variety of baking, including muffins, cookies, and making pasta or pizza.
