Chewy Chocolate Chip Cookies

Yields1 Serving
 2 cups Whole wheat or whole spelt flour
 ½ tsp Salt
 1 tsp Baking soda
 1 cup Butter, softened
 ½ cup Granulated sugar, or cane sugar
 1 cup Brown sugar
 1 Large egg
 1 tsp Vanilla
 2 cups Milk chocolate chips
 Preheat oven to 375 F.

In a mixing bowl, sift together flour, salt and baking soda.

In another bowl, add the softened butter and both sugars. Beat together till the mixture is light and creamy. Add the egg and vanilla and mix well. Slowly add the flour mixture till all is thoroughly combined. Stir in the chocolate chips. With a cookie scoop drop the dough onto baking sheets. Bake, one cookie sheet at a time, for 8 to 10 minutes or till the tops are golden brown and the cookies have solid edges. Its ok if the centers are soft. Remove from the oven and allow the treats to cool before storing in an airtight container.
