My Mother’s Brown Bread

Yields1 Serving
 1 cup Warm water
 2 tbsp Brown sugar
 2 tbsp Yeast, traditional
 Mix together and let sit for 10 minutes or till the yeast mixture is bubbly.
To your mixing bowl add:
 3 cups Warm water
  cup Molasses
 1 cup Milk, your favourite*
 2 tbsp Salt
 2 Eggs
  cup Oil
  cup Honey
Stir together then add:
 8 cups Whole wheat flour
 4-5 cups Unbleached flour

Add flour till the sides of the bowl are almost coming clean. Dump onto your counter and knead by hand till smooth and elastic. Cover and let rise till doubled. Punch down and shape into loaves, dinner rolls or cinnamon buns. Let rise in pans till doubled. For loaves, bake at 350 for 35 minutes, for dinner rolls, bake at 350 for 15-20 minutes and for cinnamon buns bake at 375 for 10-15 minutes.

*Original recipe has 2/3 cup of powder milk and 4 cups water.

This recipe works well in a Bosch mixer.
