Sourdough Waffles

A waffle with whipped cream and berries on top.
Yields1 Serving
 1 cup Spelt flour
 7 oz Sourdough starter
 1 cup Rye flour
 1 ½ Milk, with 1 tbsp of lemon juice
 2 tbsp Sugar (Optional)
 4 Eggs
 1 tsp Salt
 6 tbsp Butter, melted

Stir together dry ingredients. Add milk and lightly beaten eggs to the sourdough starter.  Pour the sourdough mixture into the dry ingredients and mix just till blended. Add the melted butter. Fry in a waffle iron till golden. Serve with brown sugar sauce or maple syrup.

Brown Sugar Sauce

In a medium sized saucepan, melt a ½ cup butter. Add 2 cups of brown sugar and boil together till thick and of caramel consistency. Slowly, stirring all the time, add ½ to 1 cup of cream and let come to a simmer. Take off the heat and serve over waffles or pancakes.  You can also use this for a caramel sauce when making cinnamon rolls.
