Sifted Stone Ground All-Purpose or Bread Flour- “a 70-80% sifted flour that can be used instead of enriched flour”

We use our organic wheat, grown close to the beautiful Smoky River in the Peace Country, and grind it on stones that were hewn out of a granite quarry in Vermont. The slow grinding of the stone keeps the flour cool and preserves the nutrients of the grains. It is then run through a sifter and part of the bran is sifted out. The finished product is soft and light and can replace all-purpose or bread flour.
